Fresh Tomato Salsa

FRESH Tomato Salsa (Makes 3-4 cups)


2-3 medium sized tomatoes  OR 1-1 ½ lbs tomatoes, stems removed, finely diced
½  onion, finely diced
1 jalapeno chili pepper (stem, ribs, seeds removed),  finely diced
1 serrano chili pepper (stems, ribs, seeds removed),  finel y diced
Juice of one lime or 1 tbsp lemon juice
½ cup chopped cilantro
Salt, pepper to taste

Optional:  Oregano, and/or cumin to taste

Chop tomatoes.  Prepare chilies (Touching hands, face with residue from hot chili’s can cause skin, eye irritation.  Wash hands thoroughly with soap; avoid touching face for several hours after working with the peppers.) using fork or food processor.  Remove stems, seeds before chopping, adding to salsa.  Combine all ingredients in medium sized bowl.  Taste.  If too hot, add more tomatoes;  if not hot enough add  more chili’s or ground cumin.  Allow to sit for an hour for flavors to combine.  Serve with chips, tortillas, tacos, burritos.
