Herbed Squash Salad with Yogurt Dressing

Herbed Squash Salad with Yogurt Dressing (Serves 4)

Ingredients

2 medium yellow squash, cut into ¼ inch half-moons
1/4 medium red onion, thinly sliced
1 tbsp extra-virgin olive oil
2 tsp fresh lemon juice
1/3 cup nonfat plain Greek yogurt
2 tsp chopped fresh parsley leaves
2 tsp chopped fresh mint leaves
½ cup toasted pine nuts (optional)
Coarse salt and ground pepper

Directions:

In medium bowl, combine squash, onion, olive oil, lemon juice, yogurt, parsley, min and pine nuts.  Season with salt and pepper.  Serve.  Great with lamb burgers, grilled chicken.
